i cooked something Shadoe loved!!!

Shadoe's mom is an amazing cook, so the pressure is always on for me.
not really though.
i just get jealous when i see how much he loves his mom's cooking compared to mine. so i got to work to find a recipe that would steal his heart!
&& I FOUND IT!!!
while watching my favorite show:

haha it's a simple casserole recipe, but extremely tasty!
so here it is!


Barbecue Chicken Penne Melt
1 pound mini penne
2 tablespoons plus 2 teaspoons unsalted butter
1 tablespoon olive oil
2 cups diced onions
4 to 6 cups shredded store-bought rotisserie chicken
1 quart bottled hickory-smoked flavored barbecue sauce
12 slices bacon, cooked until crispy and crumbled
½ cup chopped scallions, white and green parts
1 ½ cups shredded mozzarella cheese
2 cups shredded sharp cheddar cheese

In a medium saucepan, cook the pasta according to the package directions until al dente. Drain, do not rinse, and set aside.

In a medium skillet, heat the butter and oil over medium-high heat and, when hot, add the onions and cook, stirring until softened and starting to brown, about 5 minutes.

Preheat the oven to 375°F. Grease an 11 by 9-inch baking dish.

In a large bowl, toss the pasta with the chicken, 3 1/2 cups of the barbecue sauce, the bacon, scallions, and cooked onions. In another bowl, stir together the cheeses.

Spread one-third of the pasta mixture in the prepared dish and top with one-third of the cheese. Make two more layers of the pasta and cheese, cover with aluminum foil, and bake for 30 minutes. Remove the foil and continue to bake for another 10 to 15 minutes, until the cheese is browned. Remove from the oven, drizzle with the remaining 1/2 cup barbecue sauce, and serve.

Shadoe and I found it quite tasty to mix green beans in as well. We also just used chicken breast that we made at home ourselves and it worked perfectly!

four month old chance!

he is BIG and HANDSOME and we love him!!!!

at Chance's four month appointment we got these results:
90th percentile in weight at 17.4 pounds.
90th percentile in height at 26 and 1/2 inches.

he truly is a big boy!!

Shadoe LAUGHED at his shots, and as usual,
I teared up at seeing my baby boy in pain and distress!

He has definitely started to outgrow cuddling,
because he loves stretching and sprawling soooo much.
So i'm always thankful for the moments he will cozy up to me!

chance's room

we finally got chance's room all put together!
details: the name - my bestie christie gave that to me.
my favorite book - love you forever - it is now the only story that will get chance to sleep!
scriptures, one month picture, hope block, and pray often.
on the far right is a cross stitch that my grandma larson (Chance's Great Grandma) made for him. it's adorable!!!
we got the crib at wal-mart for $140 and i looooove it!!!
I made the quilt with the help of my aunt lyn and uncle jim.
the two other blankets were made by my roomies - mandy paxton and missy adams.
love those ladies!!
the stuffed animal in the crib is Chance's PUP-PUP. he LOVES it so much!

the story is pretty much like this...

on monday may 16, 2011 we both agreed that we couldn't stand living together anymore without being married. so the decision was made. on thursday, we would be wed!

so we asked Shadoe's grandpa, and our friend Clyde to come be witnesses for us and they both happily agreed. and the day was set!!

so, thursday morning - MAY 19, 2011 - we got in some nice church clothes and headed to the court house. it took a total of five minutes, but they were definitely my favorite five minutes of my life so far! the clerk who did it ended up being a friend of Shadoe's mom, so she was so excited to do someone she knew. she compared my ring to married life in that at the top is where we are starting out - it's beautiful and lovely. but as our life progresses, we will go down to the dull part of the ring where things are hard and not pretty at all. but as long as we keep WORKING - she promised it would be work - together, we would always work our way back up to the top, where it is lovely and beautiful! i enjoyed that analogy!!

i was so happy afterwards i was smiling, crying, and laughing all at once!

we are now planning a couple open houses and a ring ceremony for the rest of our family and friends to be able to see! and i will definitely posting when that will be as soon as we decide. it will be a wednesday in july though for sure!!

we both want to be a forever family.. and SOON! we hate not being sealed to each other and our Chance bug. may 2012 sounds so much better than july or august 2012. so we have already started our preparation to return the iron rod. everyone can mark their calendars for our temple date goal!
which is:
SATURDAY MAY 19, 2012!!!

we are both soooo happy to finally be mr. and mrs. stebbins!!!


i bought Chance this cute lumber jack onesie, before he was born and it fits him now!! too bad its
getting warm. haha. so, since Shadoe had a nic
e beard and a lumber jack shirt as well, i just HAD to take pictures of my two
men. and of course slip some of me in as well!! we just went out into the wilderness of our own back yard and snapped a few shots, so here they are!

there is a lady here in kanab named Becka Ott. she does photography on the side for fun, and she does amazing!!

she was amazing with chance and he warmed right up to her! here are a few of my favorites...

Chance was still super little (well.. kinda) when these were done... i think just over ten pounds.
he was super cuddly at this time. not so much anymore... which makes me sad!! its crazy to think he wasn't really even smiling that much at this time. but he is still just so adorable!

Chance and I moved down to live with Shadoe on may first. and we are all loving every minute of being together as a family!
